The U.S. Department of Agriculture’s Agricultural Research Service (USDA ARS) has initiated a far-reaching project called the Salmonella Grand Challenge.

The endeavor unites a group of scientists from ARS, universities, and the food industry, each specializing in various fields, to combat Salmonella, a foodborne pathogen that infects a million Americans annually. The challenge aligns with the ongoing efforts of the USDA’s Food Safety and Inspection Service (FSIS) to develop a more effective strategy for reducing human Salmonella illnesses associated with poultry.

The primary objective of ARS is to integrate its research and expand understanding of how and where Salmonella poses the highest risk of contamination in meat and poultry products. This knowledge will prove invaluable in developing enhanced monitoring tools for meat and poultry producers to detect Salmonella contamination.

Salmonella, the bacterium responsible for the illness known as salmonellosis, is present in nearly every corner of our environment — from animals (including pets) to food, water, soil, and even the air. Individuals infected with Salmonella experience a range of symptoms including diarrhea, fever, abdominal cramps, chills, headache, nausea, and vomiting. The infection can result in long-term health complications and even death in severe cases.

To tackle this pervasive issue, the ARS team will combine their ongoing research efforts by combining, standardizing, and coordinating their work to create unified datasets. This collaborative approach will enable them to identify broader trends, emerging threats, and innovative strategies for mitigating Salmonella.

There are more than 2,500 types of Salmonella bacteria, each presenting different risks across various production systems. To effectively manage the vast amount of data, the research team will employ machine-learning tools, streamlining the analysis and integration process. The collaborative nature of the project will foster knowledge-sharing among researchers, potentially leading to groundbreaking discoveries.

The Salmonella Grand Challenge will empower researchers to deepen their understanding of Salmonella risks, develop accurate predictive models, and create monitoring tools specifically tailored for meat and poultry producers. Ultimately, the team aims to contribute to the Healthy People 2030 objective of reducing salmonellosis cases by 25 percent.

Conagra Brands Inc., of Fort Madison, IA, is recalling more than 2.5 million pounds of canned meat and poultry products because of a packaging defect that may cause the products to become contaminated without showing any outward signs of contamination, the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced.

Recalled brands include Armour, Kroger, Goya, Prairie Belt, Hargis House, Grace, and Great Value.

The problem was discovered when the company notified FSIS after observing spoiled and/or leaking cans from multiple production dates at the establishment’s warehouse.

A subsequent investigation by the establishment determined that the cans subject to recall may have been damaged in a manner that is not readily apparent to consumers, which may allow foodborne pathogens to enter the cans.

FSIS is concerned that some products may be on retail shelves or in consumers’ pantries.

The meat and poultry products were produced between Dec. 12, 2022, and Jan. 13, 2023. These items were shipped to retail locations nationwide.

Recalled products:

  • The products subject to recall bear the establishment number “P4247” on the product cans.
  • Labels and product codes can be viewed here.

As of the posting of this recall, there have been no confirmed reports of adverse reactions due to the consumption of these products. Anyone concerned about an injury or illness should contact a healthcare provider.

Consumers who have purchased these products are urged not to consume them. These products should be thrown away or returned to the place of purchase.

About Listeria infections
Food contaminated with Listeria monocytogenes may not look or smell spoiled but can still cause serious and sometimes life-threatening infections. Anyone who has eaten any of the recalled products and developed symptoms of Listeria infection should seek medical treatment and tell their doctors about the possible Listeria exposure.

Also, anyone who has eaten any of the recalled products should monitor themselves for symptoms during the coming weeks because it can take up to 70 days after exposure to Listeria for symptoms of listeriosis to develop.

Symptoms of Listeria infection can include vomiting, nausea, persistent fever, muscle aches, severe headache, and neck stiffness. Specific laboratory tests are required to diagnose Listeria infections, which can mimic other illnesses.

Pregnant women, the elderly, young children, and people such as cancer patients who have weakened immune systems are particularly at risk of serious illnesses, life-threatening infections, and other complications. Although infected pregnant women may experience only mild, flu-like symptoms, their infections can lead to premature delivery, infection of the newborn, or even stillbirth.

The U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) is issuing a public health alert because A & S Produce Inc., of Vernon, CA, establishment conducting business as Greenland Food Company, produced and distributed fully cooked, frozen swai fried fish cutlet products without the benefit of federal inspection.

These items were sold at retail locations in California and through online sales.

A recall was not requested because the products are no longer available for purchase. However, FSIS is concerned that some product may be in consumers’ freezers.

The fully cooked, frozen swai fried fish cutlet products were produced from July 2022 to September 2022 and have a shelf life of two years.

Product subject to the public health alert:

  • 1-lb. vacuum-packed packages containing “Fried Fish Cutlet.”

The products involved in this public health alert do not bear the establishment number or a USDA mark of inspection.

FSIS discovered the problem when it was conducting surveillance at an online retailer and found FSIS-regulated products without a USDA mark of inspection.

As of the posting of this alert, there have been no confirmed reports of adverse reactions due to the consumption of these products.

Consumers who have purchased these products are urged not to consume them. These products should be thrown away or returned to the place of purchase.
